Add an exception to the SimplifiedJson settings provider to output standard-type UUIDs as typical hexidecimal-string format via
.asUuid().toString()BsonBinary functions. UUID v3 values will still output as straight Base64 toString encoding.See https://jira.mongodb.org/browse/KAFKA-398
