The original 4.03 lab involves primitive ASCII art, which doesn't interact well with screen readers and will therefore be frustrating for blind students. This one, however, should be easy to verify correctness with or without a screen reader.

I really like this suggested change; however, there are two primary issues with it. First, the suggested lab should be an alternative assignment, not a replacement. For some learners, the ASCII art assignment is really engaging while the concept of a cipher might be something they would struggle with. Second, not only do the markdown files need to be updated, but the HTML and PowerPoint files also need to be updated.

I unfortunately don't have a copy of Microsoft Office, so I won't be able to make a .docx or .pdf version of the new lab; otherwise, it's now a separate lab and the lesson has been tweaked accordingly.

Merged pull request. Will open an issue to complete this update in the associated files (PDF, PPT, etc.).
