After reconsidering #569, the team decided that we should bring back a reduced version of #1174 / #1166 with Jackson serializers (for Jackson 2.x and 3.x) that are only applied to clients for sending variables.

The goal here is to allow for ArgumentValue<T> fields in *Input types for sending variables in graphql requests.
