Switches to not EOL release action that can handle multiple release files
Not sure if the original default would have worked, but this one is set and documented

| seems ok actually, gets the release of the existing tag that the event passes, and uses that as the name to update the release https://github.com/softprops/action-gh-release/blob/fe9a9bd3295828558c7a3c004f23f3bf77d155b2/src/github.ts#L215-L236 |
