Attempt to fix process summary name

What does this PR do?

This is a fix for elastic/kibana#92636

There's a bit of an issue here, as this will break anything from before this fix: elastic/kibana#99852 The fix has been backported, but it still hasn't trickled down to docker container builds, snapshots, etc. Do we just want to hold off on merging it, or something else?

• pull down and build with elastic-package
• Attempt to start and ingest data from system/package_summary as system.process.summary.
