Honestly, no one needs ONE book which cover all the topics on your list. Say for Riemmanian Geometry and Geometric Analysis I would suggest

  • Cheeger--Ebin "Comparison theorems in Riemannian geometry"
  • Burago--Burago--Ivanov "Metric Geometry"
  • Gromov "Sign and geometric meaning of curvature"
  • Berger "A Panoramic View of Riemannian Geometry"
