Replace @mjackson/node-fetch-server with @remix-run/node-fetch-server

Packages @react-router/node, @react-router/serve currently depend on @mjackson/node-fetch-server, but there is now an official package published under the Remix organization: @remix-run/node-fetch-server.

Both packages provide the same API (createRequestListener, FetchHandler, etc.), so migration requires only changing the import source. The Remix-maintained package is the recommended and supported version moving forward.
