We need to add a lot of logging asap.

For python, I've already used loguru, the native logging library and so on, we need some kind of specification for what we should use and how.

Since logging should be accessible to everyone on the development team, maybe a self-hosted solution might be a good thing. e.g. sentry or datadog.

I think we should discuss this and plan how we're going to add logging.
