Updated various documentation files, code comments, and plugin metadata to reference the new Apache GitHub repository and the latest Grails documentation URLs. This includes replacing old grails/grails-data-mapping and gorm.grails.org links with apache/grails-core and docs.grails.org equivalents, as well as updating references in test comments and plugin descriptors.

Using HEAD in Markdown files is convenient, as it eliminates the need to update URLs when switching to a new release branch. The trade-off is that it always links to the latest code, but I consider this a worthwhile balance after fixing hundreds of links with old branches or commit hashes in the URL. We apply this approach across many Markdown files and in very select AsciiDoc files.
