烤鳗制作工艺复杂,仅蒲烧环节就需经过烤、蒸、再烤三道工序,配以特制酱汁。王家恩表示:"杀鱼3年就能成师傅,而烤鳗鱼需要用一生去研究。"
The process of making roasted eel is complex, with the kabayaki process alone requiring three steps: grilling, steaming, and grilling again, paired with a special sauce. Wang Jia'en said: "It takes three years to master fish killing, but a lifetime to perfect roasted eel."
