绿茶占中国茶叶总产量的70%，是最主流的茶类。著名的西湖龙井和碧螺春都属于绿茶。

绿茶加工工艺分为四种：炒青、烘青、晒青和蒸青。其中蒸青工艺在日本得到发扬光大。

Green tea processing includes four methods: pan-firing, oven-drying, sun-drying and steaming. The steaming method was further developed in Japan.

Black Tea: The Accidental Global Beverage

红茶诞生于明末清初的福建武夷山。据传是士兵意外将茶叶压红后，茶农为减少损失而发明的。

Black tea originated in Wuyi Mountain during Ming-Qing transition. Legend says it was invented when soldiers accidentally crushed tea leaves, turning them red.

红茶通过萎凋和发酵工艺制作，分为小种红茶、工夫红茶和红碎茶三类。

Black tea is produced through withering and fermentation, divided into three types: Souchong, Congou and Broken black tea.

18-19世纪，红茶成为全球贸易的重要商品，英国、俄国、印度等国都发展出独特的红茶饮用文化。

In 18th-19th centuries, black tea became important global trade commodity, with unique drinking cultures developing in UK, Russia, India etc.
